The knife-making industry is a long-standing tradition in Solsona, dating back to the 16th century.
Founded in 1917, Pallarès is the sole surviving witness of the 24 knife-making workshops —once united under the Brotherhood of Saint Eligius, the patron saint of cutlers— that thrived in the 18th century.
Throughout its history, Ganiveteria Pallarès has remained committed to selecting the finest materials, always striving for the highest quality with a clear goal in mind: to achieve an optimal cut. That’s why all their tools are sharpened by hand.
Despite all the challenges, through constant effort and hard work, the company has managed to adapt to modern times without abandoning its roots in Solsona’s artisanal knife-making tradition.
