CAN DESCREGUT is a family-run organic winery based in the farmhouse of the same name, Can Descregut. Their farming is fully organic and certified by the CCPAE (Consell català d’agricultura ecològica). This means they prioritise respect for biodiversity and the environment: their vineyards are cultivated without herbicides or insecticides, and they use only natural organic fertilisers.

Fumissola in the Penedès refers to a low, light mist resembling smoke that appears on certain winter days during anticyclonic conditions. This blanc de noirs is made from Sumoll and Red Xarel·lo — two ancestral Penedès varieties, rarely used in sparkling wines.

The vinification of this Corpinnat begins with hand-harvested grapes to prevent premature oxidation before pressing. The grapes undergo a very gentle pressing, followed by 24 hours of natural settling. Controlled fermentation takes place in stainless steel using wild yeast. The base wine is then aged on fine lees for 24 months and naturally stabilised over the winter in stainless steel.
